Here's what they look like in the store - the front ones has been peeled!Okay - because it will be really easy to get sick of veggies right quick if I don't keep it interesting and varied I 'm always on the lookout for new veggies to throw in the rotation. I got a bunch of parsnips at Safeway (for about $3). I have literally never cooked these before and haven't actually eaten them since my Baba Teenie was alive (18 years now - and I still miss her soups..............and still feel bad about breaking a glass shelf in her fridge - I always did have my nose in the fridge). Anyway - the verdict. The 5 year old gave them two thumbs up (yay), hubbies said "you can make those again" and 3 year old refused to try them (nothing new there). I quite enjoyed them. We had them with organic brown rice noodles and homemade spagetti sauce.
Perfect Parsnips 5 parsnips peeled and sliced 1 tbsp butter sea salt to taste dried or fresh parsley for garnish
I cooked the parsnips in a couple of inches of water. I brought to a boil and then reduced to a simmer for about 15 minutes. I melted butter, poured over top and tossed with salt and parsley. Voila. I considered adding honey (my old self was trying to prod me into it) but I resisted the urge - they didn't need it as they have a natural sweetness and don't need any help.
