Paleo Pork Stir Fry with Shirataki Noodles

Sesame Oil is the magic ingredient
Okay - my 5 year old actually ate all of this and took some for leftovers to school yesterday  Miracles do happen. This was our first time trying Shiratake Noodles (see my Mama's Pantry page for where to get in Winnipeg). The verdict - two thumbs up from my hubby and I thought they were pretty good for something with no calories or carbs.  We also had white rice (the kids love it and very small portions are okay for us old folks).

Pork Stir fry - General Idea (not a recipe)

Marinate 1 lb of pork in minced garlic, apple cider vinegar (1 tbsp), sesame oil and Liquid Amino's/Gluten free soy sauce. I marinated overnight.
Heat 1 tbsp of coconut oil - fry 1 tbsp of minced fresh ginger and 1 glove minced garlic for one minute before adding pork. Stir fry pork on high heat for about 5 minutes (just until cooked through) and set aside.

Stir fry veggies of choice in coconut oil until tender crisp.

Add pork to veggies and thicken sauce with arrowroot powder (I mixed it first with 1/4 cup of water). Season with liquid amino's and some sea salt/pepper. Cook for a couple of minutes until thickened. Done

For the noodles. I rinsed them thoroughly first and then fried them in some olive oil for about 3 minutes, turning them once,  just to warm them up. Also good with some liquid amino's/soy.
