Once Bitten Twice Shy Chocolate Brownies

Okay - that looks good for an oil free version.

 Little Lukey (with big, sharp teeth) has been teething really hard the last 2 days (well 2 months really). He is on a bit of a hunger strike and when he does eat he has decided to begin/end/prematurely terminate a feeding session by biting me. Holy Hanna does that hurt. All the Mom chat groups and baby sites say I should calmly and gently remove him and don't show him it hurts.............yeah right - I yell "Bad Baby" really loud- I can't help it - it just comes out of my mouth before I can think about it. Anyway - I'm naming these brownies so we can forever remember this wonderful family memory. Ya.

Okay - so I realized I made a boo-boo when I was making this batch - I always forget an ingredient when the girls are helping me bake. Things get a little frantic, messy and frankly dangerous with a 3 and 5 year old helping in the kitchen so I accidentally omitted the oil. They turned out fine but I would suggest you keep it in. These are a good wheat-free, cost-effective alternative to regular brownies. Do they taste like Baba Cindy's sugar bomb brownie - not exactly. But if you are eating clean and trying to cut down your sugar these will make you feel like you are not being deprived and let you move on to something other than thinking about what non-clean sugary treat you could be eating. Like blogging or being bitten.

Once Bitten Twice Shy Chocolate Brownies

1/2 cup dark chocolate chips (I use organic 70% cacao chips)
1/4 cup coconut flour (yay - cheap)
1/2 tsp fine sea salt
1/2 tsp baking soda
2 eggs
1/3 cup agave nectar
1/4 cup grapeseed oil (not optional unless your frazzled)
1 tbsp vanilla extract 

1/2 cup walnuts or pecans/chopped
1/3 cup dark chocolate chips (I used the big 60% cacao ones)

Preheat oven to 350 degrees. Put the 1/2 cup choc chips in the food processor and pulse until they are the consistency of sand (course). Then add each ingredient from coconut flour to vanilla into food processor one at a time until fully blended (after adding each ingredient blend fully). Put into a 8 x 8 baking pan greased with coconut oil. Top with walnuts and remaining choc chips. Bake for 25 minutes.  Enjoy.
