Muffin Faced Magic

Last Nights bedtime snack
I find it incredible how kids will eat whatever you will give them if you can somehow (and this much be really quick and easy) turn it into a face/monster/animal/whatever or add chocolate (Nutella). My 3 year old would not eat these muffins for breakfast "I don't like these" but for our evening snack she gobbled them up. These were a wholewheat/low sugar pumpkin muffin cut in half and spread with barely a whisper of Nutella. Served with banana's and strawberries. Okay - here's the recipe...........its not wheat-free and I probably won't be eating these anymore but they are REALLY good and I will probably keep making them once in a while for the kids.

Lite Pumpkin Chocolate Chip Muffins - a Pre-Clean Recipe

4 eggs
1/2 cup oil (grapeseed if you can)
1 cup unsweetened apple sauce
1 (16 oz) can pure pumpkin
1 1/2 cups sugar (I usually use brown)

1 1/2 cups white flour
1 1/2 cups whole wheat flour
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1 tsp salt

12 ounces chocolate chips

Preheat oven to 400 degrees. Mix first 5 ingredients thoroughly. Mix dry ingredients seperately. Blend two mixtures together. Fold in chocolate chips. Bake for 20 minutes in well greased muffin tins. Makes 24 muffins. Freeze well.
